Title: Fancy Scrambled Eggs

12 Eggs, beaten
3ozSauteed mushrooms -SAUCE:--
1tbButter
2tbFlour
1/2tsSalt
1/8tsPepper
2cMilk
1c(4 oz.) Velveeta cheese topping
2 1/4cBread crumbs
1/8tsPaprika
3tbButter

Fry 1 cup ham. Add 12 eggs, beaten. Scramble until just set. Fold sauteed mushrooms and eggs into cheese sauce. Sauce: Melt butter. Blend in flour, salt and pepper. Add milk. Cook and stir. Stir in Velveeta cheese until melted. Place in 9 x 13 inch dish. (Can be refrigerate overnight.) Combine bread crumbs, paprika and butter; saute. Sprinkle on top. Bake at 350 degrees for 30 minutes (more if cold).
